I am a new developer, and I am looking to be pointed in the right direction.
I am trying to use a lookup that changes, dependant on an option.
Could anyone suggest an object that I could look at for some ideas.

Depending of the option value of field "Account Type" GL-Accounts, customers, Vendors etc. the appropriate Table is shown on Lookup.
