Customer supplied raw materials? Non Item production orders?

I'm looking at a manufacturing /job shop environment. Because of the planning/scheduling requirements (especially customer's need for Gantt charts etc), using Manufacturing seems to makes more sense than Jobs/Resources.

But there are a couple of potential gotchas and I am interested in seeing if anyone has run across these and might be willing to impart some crumbs of wisdom:

1> Is there a relatively simple way to deal with customer supplied raw materials? We are trying to avoid having the receiving people need to both to set up a new item card and then receive the materials. (In short,
"stuff" can show up on the client's loading dock with a customer's purchase order and nothing yet entered into Navision)

2> In many cases, the client is not so much selling a finished good, as their services in processing the raw materials. The scheduling functions built into Manufacturing (BIG honking machines are involved) are why we are pretty stuck on Manufacturing. Has anyone been involved in customizing the production order to not be involved in the production of "items"? If so, just how major a project would it be?
