All the customization to our 2013 R2 environment is done by an external contractor.
In what way would you document changes to the NAV installation? Tables, reports, logic ...?
What data / details do you record?
Of course, we have a lot of mails and meeting protocols there, but it's longish and confusing.

The Only way I can see is That you can achieve is using modified Tag (if partner left it).
There is one more but for that you need to have developer licensce where you export all objects as text and compare them with base Navision 2013 R2 Objects.
