2003 might not be supported soon but frankly I never needed any support for it.
And if you have gone so long - upgrades might not be the best path. you're probably better off getting the new version and move forward. just add the customers, items, vendors & open entries.
For history you can log into the old system...before you know it in a few months you won't be going into the old version much at all.
Not sure it's even advisable to try and start a new database with old data. Anyway, my thoughts were we have a new hard drive, reinstalled 2003 SBS, and will start with a fresh database and no data in it or new software entirely. Hopefully will see today or tomorrow.

We have an old version running on a new Dell Server:

It says it doesn't support win server 2003 but it you can add the proper drivers to your installation using this method:

Sounds like you got your money's worth out of the old servers.
There are plenty of cheap refurbished servers out there if you are on a budget.
I would also assume you have not been paying Nav maintenance for serveral years so getting updated clients is probably out of the question.

How are you doing your backups?
using a tool like http://www.mibuso.com/dlinfo.asp?FileID=879
or HOTCOPY?? http://www.mibuso.com/forum/viewtopic.php?f=14&t=1604
if on a network you can always copy the full database to a different pc - just in case
as i said we have a new machine:
