Customise Profile after Departments Menu removed?

I want to remove the departments menu from certain profiles in NAV 2013 R2 (as per this thread http://dynamicsuser.net/forums/p/68417/360198.aspx).
But once I've done that how can I create future shortcuts on users navigation panes or Role centre ribbons from other areas of the system?
