NAV 2013 Locking down permissions

Hi all,
So we're fairly new to NAV. We've got users on a set of permissions that work, but nearly everyone can do a few things they shouldn't be able to. What's the easiest way to start narrowing that down? Am I just going to have to go through each group one by one or is there an easy way to identify what they will need based on monitoring usage?
