I often use the help for documentation. Just press F1 on an job-related page and you can see what a field means.
In help there also are procedures described. Just search in help and you will find them.
If you are working for a Dynamics partner, you can get the documentation from Partnersource. If you are working for an end user you can get the documentation through CustomerSource. You need to have a service plan for CustomerSource, else you do not have access (see: http://www.microsoft.com/dynamics/customer/en-US/service-plans.aspx)
If you don't have access to any of the 2 options, then F1 is your only option.

Not much there to use besides the help, or am I missing something?
In partnersource go to Readiness & Training, and then select Training Materials. There you can select the product and find the training materials. Sometimes not all training material will be available for the latest version, then you can search in the training material from the previous version.
