The first set filter with Alt-F3 uses the value I have selected, but for the next filter there are a lot of steps (add filter, select field, type in the value).
Unfortunately not...I found the filtering mechanics much more difficult than classic client. We can't even write the name of the field we want to filter even if we know the exact name of the field; instead, i have to search for it in a big list.
I don't know if you already know this, but you can digit the inital letter of the field you want to filter in the list of fields in order to find it more easily.
Oh, and users can save their "favourite views" of the lists if they found themselves to always apply some filters on the same fields (apply your filters, click the name of the page you find in the top left corner of your list, and save view as...).

I don't know any better way to apply multiple filters (user-side), sorry. I think the one i told you is the faster.
and the Alt+f3 is an rtc feature...the classic client way to filter fields is faster.

Shift-F3 with default values from the column you have selected would be great.
Alt-F3 has another flaw, because it doesn't let you hit enter it first goes filtering and then you can type in your filter.
So if your are on a datefield 15-10-13 and hit alt-f3, then after filtering lines on this date, only then you can type in 15-10-13..
ps.
Why can't we ask questions related to old and new functionality? I like NAV and want to keep on using it.
in nav 2009&2009R2 i used to hit alt+f3,ctrl+f (to move to the filtering textbox) and then type. In nav2013 ctrl+f has another function (find), i don't know how to do it...Maybe there's another shortcut to do it fast, but i don't know how

I see knowledged customers filter on multiple fields daily. I use it daily when searching for records.

If you use Shift F3 you can filter on all columns and save them as favorite view.
Yes, it is different than client, but that is a very old story now. It can do more but less easy.
