where can i find VAT amount fields for sales quotes?

I have tried setting up a mail merge doc for the sales qoutes so far so good.
I understand that VATamounts only show up on closed qoutes or sales order but which feelds do i have to use to display the total amount of VAT
and tot amount incl VAT?
