Back when 4.0 was the active version, MSFT was working on a "new client", which they were going to release as NAV 5.0. Then the decision was made to pull the new client out of release 5.0, and to release the new client as 5.1, in which the objects would be identical to the objects in 5.0, maybe with some bug fixes.
Then after some delays, they changed their minds and decided to include new functionality after all, so at that point they were starting to think about putting the new client in a completely new release, which they would be able to release later than anticipated, and so that's when the new client was going to be released in 6.0, which for marketing reasons was renamed to NAV 2009.
Version 5.0 SP1 is a Service Pack for 5.0 and features some technical enhancements to the exe's, and some new SQL Server performance enhancements.
So Alex is right, 5.1 and 6.0 do not exist. Version 5.0 SP1 is incorrectly referred to by some people as 5.1 and 5.01.

Can someone confirm?
Thanks
Then they changed 5.1 to be called 6.0 or Nav 2009.
5.0 SP1 was released as a follow up to 5.0 with bugfixes, etc.
