Now, if you're asking how to "configure" this without writing code, i would have to refer to "Business Notification". I'd have to ad an ironic (and sarcastic) "good luck" with that.

SMTP mailing have one bug I reported and was confirmed by Microsoft - if you call the SMTP mailing from OnModify or OnInsert trigger, you can experience very curious behavior, when the mail will be sent two times and the NAV will work with problems. Solution for that was postponed because the NAV 2009 finalizing.
Do you really need a mail alert on every event trigger or only on some specific. For example send a mail to a customer when is items are delivered or when the inventory is under the min. value.
