Is there a report that will show open sales orders (not shipped or invoiced) by product line? Again, I know I can make this, but would rather not re-invent the wheel since this seems like something that should exist.

Have a look at "Unposted Sales" as a start Sales & Marketing -> Order Processing -> Reports
