you can add a new aos by re running the installation - it will detect you already have an instance of AX - select the Object server and go through the installation giving it a new instance name and database to attach to -
after the install you will need to edit the client config file (.axc) or create a new one that points to the second instance ( this will run on port 2713 - the first instance runs on 2712)
The documentation related to Installation and Configuration is good ( you can dowload from partner source and the course it relates to is 8626B_Installation&Configuration)
Your demo scripts question - If you search partner source - documentation AX for "demo scripts" you will also find alot of these - if you have the VPC ( or you have downloaded the demo data ) you shouls be able to follow the scripts.
