There you can really go interactive with SMSs and the communication is fully XML based!
We have recently impemented an SMS service for a client following almost exactly the way Luc states in the previous reply. Sending the message in this way was relatively easy to code and cost effective. The SMS provider we used was http://www.mediaburst.co.uk who I am sure would give you some help and guidance.
