Item Cost Per Unit Issue

I have an issue with a customer who set up opening stock at a qty of 1000 with a value at £1000. Unfortunately in error someone posted an item journal with a qty of 500 with an incorrect posting date which set the qty to 500. An item journal was posted to reverse this error but was not applied to the original journal. Now the customer has a cost per unit of 0.666 rather than £1.00. Can anyone suggest the best way to get the cost per unit back to a £1.00?? Any help would be appreciated.

1. Item journal - put the inventory to 0, then positive adjust with the following day to set the correct cost.
