If you're only looking for balances to be moved to another system, then the vendor ledger is all you need. This is assuming you already know to bring over the vendor table.
The detailed vendor ledger gives the application detail, which is not that useful if you don't want to bring over A/P history.

In my localized version (PL) there are 900+ standard tables
Do you really think that such a list helps you ? Are you sure you want to export data from all of them ?
My suggestion is - better find local NSC or smart freelancer and let them earn some money
