I would like to know if it is possible to track which users have entered orders into the [<prefix>$Sales Header] table, and also the [<prefix>$Sales Invoice Header] table once the orders have been posted?
Can you track this? Is this possible and how?

But, if you are working with an "Attain" version (3.10 or 3.60), you need to develop your own fct to track changes.
or do you want some table populated.
If you zoom on the sales & sales invoice header you should see the User ID. You can add that field to the card.

However, the Change Log feature introduced in version 3.7 and later addresses this.
