:? Can anyone tell me how the "Cost Per Unit" within the Value Entry Table (5802) is calculated?!

Did you a F1 on the field? It explains how it is calculated.

It will be calculated by the system and depends on you costing method and changes you made whenever you create PO or posting new cost / unit and for more clearly you may see how it works by press F1 button. exception here is if you have changed something within the system, you may have another definition.
