I am trying to figure out how to set up NAV approvals so the requester is informed when a PO is approved.

Hi,
This is not a standard Feature as in Till 2015. The Possible solution is -
1. Register a New Response.
2. Customize based on your requirement for the Response.
3. Add the Response in case of Event - An approval request is approved & An approval request is Rejected.
